Collection: Punjabi Chicken and Rice
This really does taste like you're being extremely naughty!! Packed with awesome flavours from the North of India. Use this recipe as part of your weight loss/bulk meal preps and feel like you aren't even dieting.
This recipe works with on the bone and off the bone chicken you just may need to alter cooking times
Ingredients
Chicken drum sticks, de-skinned and a few slices to the bone (to get the marinade in deep)
1 Heaped Tbsp Greek yogurt
3 tsp Punjabi Masala
1 tsp Garam Masala
1 Tbsp ginger paste
1 Tbsp Garlic paste
Bunch of fresh coriander (Finely Chopped, leave some for garnish)
Chilli (optional)
half tsp salt (or to taste)
1 freshly squeezed lemon
1 cinnamon stick
Chuck all of the above into a large mixing bowl and give it a really good mix. Let marinate for at least 4 hours over night is best (cover with lid/foil)
Pre heat the oven @190, in a normal standard oven dish add a touch of olive oil then add everything to the roasting tray with a splash of water. After 15 mins turn the chicken and cook for a further 15 mins. Times may alter depending on the oven, when the chicken is cooked remove. I use microwave rice. it easy fast and the perfect size portion for me. Simply add the cooked rice to the roasting tray and mix with the juices and left over marinade
Now simply plate up and make it look pretty on the plate.
Garnish with left over coriander and red chilli
