Collection: Spiced Lamb

Spiced Lamb using Taste buds Beef Madras curry Blend 

 

In food processor add, full bulb of garlic (peeled) thumb size piece of ginger, Hand full of curry leaves, hand full of coriander, full white onion, 2 heaped tbsp of beef madras curry blend from taste buds half a cup of plain Greek yogurt, a good pinch of salt and blitz.

Poor half the mixture into an oven dish, score the lamb and rub the rest into all the cuts and place it into the oven dish with 1 cup of water.

Place into a preheated oven Max heat for 20 mins then drop the oven drop to 150 and cook for 3 hours,

 

Remove the oven dish and wrap the lamb in foil to rest.

If the oven dish is hob safe (if not transfer to frying pan) Remove excess lamb fat, on a medium heat add 1 chopped red onion, chopped chilli, fresh ginger, Handful of fresh coriander, tsp mustards seeds and cook until the onions go soft stirring all the time to avoid burning. Add 1 tin of coconut milk and stir. Check the seasoning add half the juice of a fresh lemon.

 

Serve with rice and popadoms
